Baked Goat Cheese with Rustic Mediterranean Tapenade

Ingredients

  • 16oz goat cheese
  • ½ red bell pepper, sliced
  • ½ cup of cherry tomatoes
  • ½ cup of pitted kalamata olives
  • ½ cup of red onion
  • 1 garlic clove, minced
  • ½ cup of fresh parsley, minced
  • 2 teaspoon of fresh oregano, minced
  • 2 teaspoon of fresh basil, minced
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Prepare the red bell pepper, cherry tomatoes, kalamata olives and red onion.
  3. Mince the fresh herbs and garlic.
  4. Place all of the ingredients in a bowl with olive oil and salt and pepper then toss.
  5. Place the goat cheese on a oven-safe serving dish and pour the mixture with vegetables and herbs on top.
  6. Baked for approximately 10-20 minutes until vegetables are roasted and the goat cheese has softened.
