Vegan Nachos with Jackfruit BBQ

Ingredients

  • Vegan Nacho Sauce
    • 2 medium potatoes
    • 2 medium carrots
    • ¾ cup nutritional yeast
    • 1 tablespoon lemon juice
    • ¼ teaspoon onion powder
    • ¼ teaspoon garlic powder
    • Water as needed (we used 1 ½ cups of)
  • 1 10z bag of BBQ Jackfruit from Uptons
  • Optional Toppings:
    • Black beans
    • Jalapeno
    • Avocado
    • Red onion
    • Cilantro
    • Cherry tomatoes
    • Salsa
    • Lime
  • 1 6oz bag of Beanitos Restaurant Style

Instructions

  • Vegan Nacho Sauce
    1. Peel potatoes and carrots.
    2. Chop carrots and potatoes and place in a pot with water. Boil until fork tender.
    3. Drain water and place veggies in a food processor.
    4. Add nutritional yeast, spices and lemon juice.
    5. Blend for one minute or until nice and smooth.
    6. If too thick to blend, add a little water at a time until it is the thickness you like.
  • Assemble the Nachos
    1. Heat oven to 425 degrees Fahrenheit. Remove jackfruit from packaging and follow instructions from package.
    2. Place Beanitos on a large plate or platter, add toppings and pour nacho sauce over the top. Bake for 5 minutes until wanted temperature.
